One of the best tasty, healthy snack recipes
Healthy doesn't have to mean boring and this snack recipe makes a great substitute for crisps. What's more, its super-easy to make. The hardest part is washing and drying the kale! And yes, you did hear right - kale- the dark leafy green vegetable.
Kale is one of the richest sources of vitamin K, you'll find. It also boasts high vitamin C and vitamin A levels. As if that wasn't enough, kale is leading source of a selection of nutrients called glucosinolates. When digested, they are transformed to cancer fighting compounds by the body.
KALE CRISPS
Ingredients
All you need is fresh kale, olive oil ( or coconut oil), pink Himalayan salt ( this type is packed with nourishing minerals), black pepper and nutritional yeast - I use Engevita by Marigold which is available from most supermarkets and health food shops) I find this useful to have in the cupboard as a tasty savoury - slightly cheesy flavoured addition to dishes AND it’s packed with vitamins and minerals.
Method
Wash kale and dry thoroughly cut in to approximately 2 inch pieces removing the stalks
Line a baking tray with baking paper, and drizzle some olive oil on to it ( alternatively use olive oil and put in oven for a a minute to melt it )
Add the kale, coat it in the oil and sprinkle with salt pepper and nutritional yeast
Pop in the oven on a low heat ( around 120 c) for approximately 20 minutes - keep checking it and remove any that are already crispy so it doesn’t burn.
