The remarkable sauce that keeps on giving
Let me tempt you with a simple but versatile recipe and that you will use in many different ways, over and over again.
A simple apple sauce is one of the best lower carb dessert ingredients. What is special about apple sauce is that you have the natural sugars from the fruit PLUS the fibre from the skin, which means less of a hit on your blood sugar levels and less of an impact on your waistline or your mood.
You might also know this as ‘stewed apple’ and may have heard that its good for the gut (if you want to find out why check out my blog here) You’ll also find apple sauce in baking recipes, where it helps provided added moistness, which means you need a little less fat in recipes, too.
This recipe is the perfect topping for my blueberry walnut pancakes (check out the recipe in my recent blog here), buckwheat waffles, or as a topping for plain yoghurt of your choice (I love mine with a sprinkle of granola on top). As long as you choose sweet apples, there’s no need for any added sugar.
INGREDIENTS
4 medium sweet apples like Gala, Golden Delicious, Pink Lady, Braeburn.
½ tsp ground cinnamon or mixed spice
1 tsp lemon juice
METHOD
Chop apples (wash and core them but no need to peel).
Add to a saucepan with cinnamon and cover.
Cook over a medium heat for 15-20 mins with 60ml water, stirring occasionally, until beginning to caramelise.
Mash with a spoon or potato masher and add lemon juice or blend with a stick blender/ in a food processor for a smoother consistency.
We’re good at growing apples here in the uk but don’t get to see many of our delicious varieties in supermarkets but, in honour of this humble fruit, it’s worth making a pilgrimage to your nearest farm shop to see what is on offer.
It’s Apple Day this month and under normal circumstances you might even see apples are being celebrated where you live in a bigger way – apple themed events at this time of year range from small affairs to full-blown fairs where enthusiasts come together to share recipes and advice on all things apple.
