The best quick, tasty breakfast recipe for a sprightly start to your day

We often think of pancakes as something of an indulgence – a lazy weekend breakfast or holiday treat. But this recipe provides the benefits of eating a healthy balanced breakfast and is a delicious way to start the day. The ingredients provide protein and healthy fats to help regulate our blood sugar and reduce cravings, in addition to many of the vitamins, minerals and antioxidants needed for a healthy body and mind.

Ingredients

Yield- approx 6 small pancakes

  • 3 large eggs

  • 175ml milk of your choice

  • ½ tbsp freshly squeezed lemon juice

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • 60g coconut flour

  • ½ tsp baking powder

  • ½ tsp bicarbonate of soda

  • 30 g walnuts chopped

  • Coconut oil

  • Pinch salt

METHOD

  1. In a large bowl – whisk eggs and add in  vanilla extract, milk, lemon juice

  2. In another bowl – mix the coconut flour, bicarb, baking powder, cinnamon and salt

  3. Add dry ingredients to wet – folding gradually (will become like cake batter)

  4. Gently fold in the walnuts

  5. Melt a little coconut oil in the pan

  6. Take approx half a ladle off batter and add to pan

  7. Cook until bubbles appear ( approx 2-3 mins) and then flip – repeat with all the mixture

  8. Make a blueberry sauce by simmering the blueberries in a small pan with 2 tbsp water

  9. To serve stack pancakes on top of each other drizzling blueberry sauce over each stack
