Super-quick, nutritious and tasty -this one's a winner

SPEEDY CHICKEN TIKKA DINNER

This is the perfect speedy dinner if your go-to quick feast is a curry takeaway! This homemade version can be prepped in the morning or made in one go.

And though I love experimenting with spices, this recipe only requires a ready made curry paste, to keep it simple and quick. (My favourite is Geeta's Tikka paste which comes in a convenient small sachet )

INGREDIENTS

Chicken Tikka

  • 150g natural yoghurt

  • 2 tbsp tikka Curry Paste

  • 4 skinless chicken breasts cut in to smallish chunks

Raita

  • 200g natural yoghurt

  • 1 red onion

  • finely chopped ½ cucumber ½ pack coriander

  • chopped 1 lemon

Salad for serving

  • 275g vine tomatoes

  • large bag (or equivalent) green salad leaves

METHOD

  1. Mix together 150g of yoghurt with curry paste in a large bowl, add the chicken and coat in the mixture, cover and chill for 30 mins if time allows.

  2. Prepare the raita close to the time of eating by halving the cucumber lengthways, cut into dice then put in a bowl with the onion, coriander and 200g of yoghurt and add the juice of half lemon

  3. Line a grill pan with foil and grill the chicken for 20 mins turning until nicely browned.

  4. Assemble the salad leaves and tomatoes, chicken, serve with lemon wedge, some extra chopped coriander and raita.

  5. Serve with side dish of quinoa, cauli rice or brown rice
